The botany, and why it matters commercially

- Soundness — whether the seed is whole and undamaged
- Moisture content — critical for storage life and safety
- Freedom from mould and insect damage
- For mace, colour — brighter is graded higher
The commercially important point for a producer is that most of these are determined after harvest, not on the tree. Handling, drying and storage decide grade far more than the crop itself.
